Classic Mac and Cheese, with some garlic-roasted tomatoes flavored with herbs.
 
Pasta Norma (Ziti Pasta with Eggplant Sauce) with Lemony Green Beans

Roasted eggplant gives the tomato sauce in this dish its creamy consistency (Vegan or w/Parmesan cheese, optional). Lemon juice and lemon zest flavor steamed green beans.
 
Penne Pasta and Garlic Shrimp and Roasted Cauliflower

Little quills of pasta laced with garlic and shrimp. Served with nutty-flavored roasted cauliflower.
 
Ricotta Rigatoni with Garlic Broccoli

Tube-shaped pasta in ricotta-tomato sauce. Broccoli sauteed in olive oil completes the meal.
 
Roasted Vegetable Lasagna with Antipasto Salad

Zucchini and eggplant are slow-roasted to bring out their full flavor, then layered with cheese, noodles, and tomato sauce. Cauliflower, broccoli and carrots are tossed in a vinaigrette as an antipasto.
 
Spaghetti and Tofu "meat"-balls with Roasted Asparagus

Oregano and garlic flavored tofu balls are sauteed in olive oil then simmered in a marinara sauce, served with slow-baked asparagus. (Vegan, w/Parmesan cheese optional.)
